Locanda Margon

Locanda Margon is a natural terrace of rare beauty nestled in  the vineyards on the outskirts of Trento, in the North East of Italy. Villa Margon, the splendid 16th Century mansion, which is Ferrari's hospitality center.

Alongside the Ferrari Trento Winery, the Villa and the Locanda express that journey of "Beauty and Taste" that the Lunelli family, at the helm of Ferrari Trento for the last three generations, really wanted to combine the very highest levels of art, nature, bubbles and cuisine.

Edoardo Fumagalli, Locanda Margon’s Executive Chef since July 2019, proffers his gastronomical experience based on solid technical foundations and an in-depth knowledge of the raw ingredients, in particular those to be found in the mountains, yet he best stands out for his creativity and modernity. The corner stone of his cuisine is respect for the ingredients leading to “simple complexity”, as he defines it.

Born in Lombardy in 1989, Edoardo Fumagalli has built up an important international curriculum, starting out in Milan’s il Marchesino restaurant by Gualtiero Marchesi, working with purveyors of great cuisine such as Taillevent in Paris and New York’s Daniel and gracing the Locanda del Notaio near Como. His dedication combined with an approach to cuisine that emanates from three keystonesingredients, technique and freedom of execution – allowed him to secure the title of “best emerging Italian chef” 2017 in the San Pellegrino Young Chef competition.

Dedicated to their guests Locanda Margon’s gourmet proposal is a celebration of fine cuisine paired with Ferrari Trentodoc wines.

The well-stocked wine list not only features an ample selection of Italian and international labels and Ferrari old vintage wines but it also contains hard to find, rare bottles from the Lunelli family’s private collection. Since 2010, the front of the house has been coordinated with great courtesy and professionalism by the young maître Aleksandar Valentinov Nikol.
