Summer mountain pasture butter made from raw cream
Botìro di Primiero di Malga: a raw cream butter naturally separated in the mountain dairy, made from milk produced during summer mountain pasture grazing.
This is a product of excellence with a great history that dates back to the period of the ‘Serenissima’.
Today, as yesterday, the quality of the product derives both from the floral richness and variety of the pastures, that generate its intense yellow colour and rich aroma, and the accurate processing of the cream.
This traditional method had almost disappeared over the years, but through the recognition of the Slow Food Presidium it was relaunched within the context of the effort to recover the ‘malghe’ and to enhance the value of their knowledge and the role they play in safeguarding the territory and the preservation of the landscape. Via this route, that envisages compliance with a set of rules that affects the entire production chain, the cheese Botìro di Primiero di Malga has become a cultural asset for the entire Community of Primiero.
Due to its special fragrance, Botìro is at its best eaten fresh with bread, jam, honey or sugar, as well as on salted meats or smoked trout, or melted over hot dishes.
Due to its authenticity, it is available only from June to September in limited quantities (booking recommended).
